Freezing Peppers

When I was in High School I worked at a Restaurant, it was there that I learned how to prepare peppers for freezing. Buckets, buckets and more buckets of them! The 5 gallon kind! The owner would buy green peppers and have us clean them. After several buckets full, you became very quick at it. To this day, everytime I clean a pepper I remember those buckets full we had to clean. We had lots of peppers from the garden, but you could also freeze them when they are on sale. Aldi’s typically ha4-5PM finds us in the kitchen on weekdays during the school year. My kids, still in elementary school, enjoy doing their homework at the kitchen table, the hub of our home. I like it too. While I start preparations for dinner, they work on spelling words and vocabulary definitions. I'm there to prod and answer quick questions. Unless it's math. Vegetable Slice Recipe

Menu Plan for the Week

After a very crazy three weeks I think life may get back to normal this week.  However, normal for this time of year is still a little nuts.  There’s still more canning to do.  Matt’s soccer team is off to a great start and now our own boys will start soccer for the fall season.  Justus has his first practice Monday.  After church today we had a big potluck to welcome the York College students.  If you remember,When I was reading through the numerous food blogs I read everyday I came across this post on Today's Menu Take It or Leave It. Farmers Market Etiquette

I’d be hard pressed to find someone in New York City to argue negatively about the idea of eating more locally grown produce or locally made foods.  Let’s face it, green fever has been sweeping this city for the past decade, and along with it has emerged a thriving “ green market culture.”     We are in the midst of my favorite season at the farmer’s markets.  Sunny orbs of squash, bouquets of basil, sweet nectarines, and mounIn our town, we have a Farm Market/Orchard that has been in family business for 100+ years. In the fall we enjoy picking apples at the orchard and during the summer months, especially right now, we enjoy their sweet corn. I'm am not a photographer.  I just take pictures. But that doesn't mean I don't want great photos on my blog or in my scrapbook . For months, I've been on a quest to find an easy-to-use, option-filled, free program that will turn my blah into beautiful. I use a really great camera that I bought for my hubby for Christmas 3 years ago. . But I don't adjust the lenses and keep it on auHere in the Midwest, it’s harvest season. People’s gardens are full of produce which is currently being picked, and many kitchen tables are full of vegetables. For a gardener, this can be the best part of the year – the sheer possibility of all of these fresh vegetables and fruits is intoxicating. But it can also be overwhelming. For some people, after several months of keeping a vegetable garden in tip-top shape, collecting giant baskets of vegetables means just the beginning of anotherLast time I updated about the garden , the squash plants were in full force. We planted zucchini, yellow squash, and some patty pan squash. Squash always seems to do well, and we always have a plethora of the brightly colored vegetables. Truth be told, I was sick and tired of seeing, picking, and eating squash. That’s when it started to get bad. There was squash in the garden, in the refrigerator, and even on the counter. And for a country like the Netherlands, it's far more likely to work. But the USA has a much bigger population and 50 states, each of which would have different laws. I'd be OK with a system that's OK for everyone. But when a country as large as the US tries to socialize health care, what happens is crappy health care for most, decent (but 10 times as expensive) health care for a very very small minority.
